Recipe Wednesday

I'm shamelessly copying Darla, and going with a recipe today. This is one of my favorite bar cookies to make. And, wherever I take them, they don't last long!

O’Henry Bars

2/3 cup vegetable oil
1 cup packed brown sugar
½ cup Karo corn syrup
4 cup rolled oats
½ teaspoon salt
3 teaspoons vanilla

Topping:
1 cup chocolate chips
½ cup peanut butter

In a mixing bowl, combine vegetable oil, brown sugar, corn syrup, salt and vanilla. Add rolled oats; mix well. Press oat mixture into a greased 13-in.x 9-in.x 2in. baking dish. Bake at 375 degrees for 10 minutes.

For filling, mix chocolate chips and peanut butter in a double boiler. Cook on medium-high heat until mixture is melted. Spread over oat mixture. Cool 10-15 minutes before cutting into bars. Cover and store in the refrigerator.

Yield: about 4 dozen

Yeah! I've been wanting this recipe. An old friend had it but we lost it. I'm glad you're shameless.
